I am proud when
I see supermarkets starting to sell “wonky ” fruits and vegetable on a cheaper price. I am happy to buy and use it. Actually, they taste better!
If I could change one thing in my industry it would be
to make sure that the entire kitchen team is involved in the food that is presented to one’s plate, from the chef to the person responsible for food storage. Everyone needs to be doing their best to keep the chain moving and making sure the food is fresh and safe to eat. Bon Appetite!
