Helio’s favourite type of is Mediterranean and Middle Eastern, but has a special relationship with the sweet tooth. He says that his favourite dishes to prepare are cakes and desserts. He is also tuned with sustainability, and create different dishes from leftovers frequently.
His inspirational list of great chefs obviously includes Ruth and Nigella Lawson. Rose Gray and Yotam Ottolenghi complete his list of favourites.
